Fried rice with spring onions, mushrooms, carrots, green beans and prawns.
A simple dish of Vietnam.
I have used in this recipe peeled raw big prawns, but other species can also be used.
If you use prawns who are already cooked, add them together with the rice.
Preparation time: about 60 minutes.
2 tablespoons rice oil,
450 grams peeled raw prawns,
3 spring onions,
50 grams of mushrooms,
1 small carrot,
50 grams of green beans,
1 tablespoon rice wine,
1 teaspoon light soy sauce,
freshly ground 4-season pepper,
200 grams of rice.
Prepare the rice according to instructions on the package and let it cool.
Chop 1 spring onion finely.
Cut 2 spring onions into rings for garnish.
Slice the mushrooms.
Cut the zucchini into thin slices.
Cut the carrot into thin slices.
Cut the beans into pieces of 1 inch.
Heat the rice oil in a wok and stir fry the chopped spring onion for 1 minute.
Add the mushrooms and other vegetables and stir-fry 2 minutes on high heat.
Add the prawns and remaining ingredients (except the rice) and stir until the shrimp are cooked.
Add the rice and continue with stir-frying until the rice is discolored.
Put the dish in a large bowl or on a large plate and garnish with the spring onions.
