A creamy leek soup flavored with onions, red bell peppers, leeks and cream.
Very soft taste.
Easy to make

A tastfull creamy leek soup, flavored with onions, red bell pepper, leeks and cream. Very soft of taste. Easy to make. Prepared by the Happy Chief Cook.

Servings: 4.
Ready in ± 45 minutes.


400 g leeks,
1 onion,
1 teaspoon curry powder,
2 vegetable stock cubes,
1 liter of water,
1 red bell pepper,
0.1 liters cream,
1 tablespoon real butter,
4-season pepper.


Peel the onion and chop it finely.

Wash the leeks, and cut into very thin rings.

Wash the leek rings again.

Wash the red bell pepper and remove the seedbox, the seed and the white.
Cut the red pepper into small thin strips.


Fry the chopped onion in the butter with the curry powder.

Crumble the fried onion vegetable stock cubes by 1 liter and pour boiling water over.
Stir together well.

Keep 100 grams leek rings for garnish.
Add the remaining leek rings in the soup and let it simmer for 10 minutes.

Put the soup in a blender and puree it.

Bring it on taste with salt and 4-season pepper.

Add the small narrow strips of red bell pepper, and the cream.

Heat the soup again, but let it not come to the boil.

Spoon the soup into the plates and garnish with leek rings that you have kept apart.
