DutchVERA CRUZ PRAWNS

Vera Cruz Prawns, a Mexican dish prepared by the Happy Chief Cook.

A very spicy dish.

Veracruz is a port on the Gulf of Mexico.
Many colorful seafood dishes are called after this city.

Preparation time: 30 minutes.
Serves: 6.

Ingredients:

1 tablespoon sunflower oil,
1 large onion,
1 green pepper,
4 green chillies,
double the amount of taco sauce,
12 pimento olives,
2 teaspoons capers,
0.5 teaspoon ground cumin,
600 grams uncooked prawns,
2 tablespoons lime juice,
salt,
cooked white rice.

Predirections:

Chop the onions finely.

Remove the seeds of the green bell peppers and cut it into small strips.

Remove the seeds of green chili peppers and chop the green chillies finely.

Halve the pimento olives.

Directions:

Heat the sunflower oil in a large saucepan.

Add the onions and green bell peppers, and sauté the onions until they are soft.

Add the green peppers, taco sauce, pimento olives, capers and salt.
Bring it to a boil.
Reduce the heat and let the sauce simmer for 5 minutes.

Remove the skins and where necessary the black intestinal vein of the prawns.

Cook the prawns in the sauce, until they're red and curled.

Add lime juice to taste.

Serve the prawns with rice.

Tips:

The sauce can be made in advance.

If you want to make this dish less sharp, you can use Tabasco sauce instead of fresh green chillies.
Or you use 1 or 2 peppers fewer.

Serve it with a mixed salad.
