DutchDUCK BREAST WITH ORANGE SAUCE

Duck breast with orange sauce, served with potato croquettes, green beans and candied orange slices. An original recipe from the Happy Chief Cook.

Duck breast with orange sauce, served with potato croquettes, green beans and candied orange slices.

Serves: 2.
Preparation time: ± 40 minutes.

Ingredients:

400 grams of duck breast,
3 oranges,
50 grams granulated sugar,
52.5 grams butter,
12.5 grams of flour,
sea salt,
4-season pepper,
300 grams green beans,
16 potato croquettes.

Directions:

Cut a diamond pattern in the skin of the duck breast, each cut one centimeter of the previous cut, and sprinkle with salt and 4-season pepper on both sides.

Heat 40 grams of butter in a pan and brown the duck breast in about 3 minutes.
Place them 15 minutes at 200 degrees Celsius (hot air) or 220 degrees Celsius (electric) in a preheated oven.

Squeeze 1 orange.
Grate the zest of half an orange (only the orange outer skin)
Cut the zest of the remaining 2 oranges so that even the skin of the wedges is removed.
Cut the orange wedges from the membranes loose.
Wallow the orange wedges in granulated sugar.

Allow 25 grams of sugar to caramelise and extinguish that with the orange juice.
Add the grated orange zest and the juice of the duck breast as well, and let it cook for a minute or two.
If necessary you can add a little water, and bind the orange sauce with kneaded butter (a cold roux made of 12.5 grams flour and 12.5 grams butter should be enough).
If you bind with kneaded butter, you can the orange sauce not boil anymore.

Fry in the meantime, the potato croquettes and cook the beans with some salt in the water.

Serve:

Heat the plates.

Cut the duck breasts lengthwise into slices and serve with the sugared orange wedges, sauce, potato croquettes and green beans.
