DutchROASTED CHICKEN FROM THE OVEN WITH PEANUTS SAUCE

A simple dish from Keyna to make. Roasted chicken drumsticks from the oven with Peanut Sauce, served with white rice and Saladi (Relish Salad). Prepared by the Happy Chief Cook.

Servings: 4.
Preparation time: 45 minutes.

Ingredients:

8 chicken drumsticks,
4 tablespoons ghee*,
sea salt,
4-season pepper,
125 grams of peanut butter,
1 tomato,
1 onion,
250 ml whole milk,
1 red chili pepper.

* Ghee:

Ghee is made by simmering unsalted butter in a large pot until all water has boiled off and protein has settled to the bottom. The cooked and clarified butter is then spooned off to avoid disturbing the milk solids on the bottom of the pan. Unlike butter, ghee can be stored for extended periods without refrigeration, provided it is kept in an airtight container to prevent oxidation and remains moisture-free. Texture, colour, or taste of ghee depends on the source of the milk from which the butter was made and the extent of boiling.

Predirections:

Chop the onion finely.

Notch in the tomatoes and dip them under boiling water for one minute.
Let the tomato scare in cold water.
Take the skin off of the tomato and chop the tomatoes finely.

Remove the seeds of the red chili pepper and throw that away.
Finely chop the red chilli.

Directions:

Place the chicken drumsticks in a roasting pan.

Lubricate them with 2 tablespoons ghee, and then sprinkle with sea salt and 4-season pepper.

Bake the chicken drumsticks 20 to 25 minutes in a preheated hot air oven of 170 degrees Celsius.

Melt 2 tablespoons ghee in a frying pan and fry the onions until they are golden.
Stir in the chopped tomato and let everything simmer for 5 minutes.
Add the peanut butter and mix it all well together.
Stir finally the milk and 1.5 teaspoon sea salt through.

Put a lid on the pan and let the sauce simmer 20 to 30 minutes.
Stir occasionally.
If the peanut sauce becomes too thick, you can dilute it with some water.

Serve the chicken drumsticks with the peanut sauce.

Serve with rice or sweet potatoes.
