DutchITALIAN PEA SOUP

A simple delicious Italian soup, prepared by the Happy Chief Cook.
Based on the recipe of Jamie Oliver "Pea soup from Altamura".

Italian pea soup. A simple delicious Italian soup with a surprising taste, prepared by the Happy Chief Cook. Based on the recipe from Jamie Oliver pea soup from Altamura.

Servings: 4.
Preparation time: 25 minutes.

Ingredients:

extra virgin olive oil,
2 medium onions,
120 grams of husked fresh peas (or frozen),
2 chicken bouillon cubes,
100 grams dried spaghetti,
1 sprig fresh mint,
1 sprig fresh basil,
1 sprig rosemary,
a small handful of fresh parsley leaves,
1 chicken breast,
1 liter of water.

Optional:

salt,
4-season pepper.

Predirections:

Peel the onions and chop them finely.

Slice the chicken into small pieces.

Break the spaghetti into quarters.

Chop the parsley leaves finely.

Directions:

Pour 3 tablespoons olive oil in a pan.
Add the chopped onion and saute them for 10 minutes on low heat.

Add the peas there and the chicken bouillon cubes with the water.
Bring it to the boil.

Then add the chicken pieces, and let it simmer for 10 minutes.

Add the sprigs of fresh mint, basil and rosemary to the soup.

Add the pieces spaghetti and let it cook according the time on the packaging.
When the spaghetti is al dente, the soup is ready to serve.

Remove the sprigs of fresh basil, mint, and rosemary from the soup.

Taste the soup, and bring it to taste with sea salt and 4-season pepper.

Divide the soup among the plates and drizzle with extra virgin olive oil.
Sprinkle some finely chopped parsley leaves on top.
