DutchSOTO AYAM (chicken soup)

A delicious Indonesian meal soup with chicken, a soup recipe from Indonesia.

Soups as we know them and especially the clear soups, have in western menus function of appetite stimulants.
Asian soups were usually as part of a complete meal served.
Today is also found in many Asian countries that the soup is served before the main courses.

A delicious Indonesian meal soup with chicken, a soup recipe from Indonesia. Prepared with onion, leek, white cabbage, celery, eggs and potatoes. Prepared by the Happy Chief Cook.

Preparation Time: 50 minutes .
Serves: 4 to 5 persons.

Ingredients:

1.5 tablespoon peanut oil,
2 large onions (chopped),
3 kemirie nuts (grated),
1.5 teaspoon turmeric,
0.5 teaspoon ketoembar (ground coriander (seed)),
1 disc trassie (shrimp extract),
1 kilogram chicken roast without bone,
o, 5 teaspoon garlic powder,
1 pinch ground lemon grass,
12 sprigs celery leaf,
1 small leek,
100 grams of white cabbage,
35 to 40 grams of rice noodles,
3 large boiled potatoes,
4 to 5 hard boiled eggs,
4 to 5 tablespoons fried onions (Bawang Goreng)
salt,
1.5 liters water.

In the recipe Soto Ayam are many variations.
Optionally, you can add 100 grams of fresh, peeled shrimp just before serving the soup.
The cabbage can be replaced by Chinese cabbage, Japanese stalk onion or iceberg lettuce.

Directions:

Heat the peanut oil and fry the onions until they are translucent looking.

Add the kemirie, tumeric, ketoembar (ground coriander (seed)), and trassie (shrimp extract).
Stir everything several times over.

Pour 1.5 liters cold water on it and bring it to a boil.

Put the chicken roast in the boiling broth.
Temper the heat source.

Add the garlic powder and lemongrass.
Leave everything for 35 minutes boil gently.

Meanwhile, finely chop the celery.
Cut the leek into thin strips.
Do the same with the cabbage.
Crumble the rice noodles.

Take the cooked chicken pieces from the pan.
Let it cool slightly.
Divide the meat into small pieces.

Strain the broth.
Bring the broth to the boil.

Add the celery, leeks and cabbage.
Leave it to boil for 3 minutes.

Add the rice noodles.
Stir well.
Let the soup then no longer than 2 minutes boiling.

Meanwhile cut the potatoes and eggs into slices.
Divide it together with the chicken on large soup plates or bowls.
Ladle the soup on it and then sprinkle some fried onions (Bawang Goreng) on.

Add salt to taste and own insight.

The broth can be frozen.
