DutchAYAM CURRY (Slightly seasoned chicken with curry sauce)

Ayam Curry, an Indonesian recipe prepared by the Happy Chief Cook.

This Ayam Curry is slightly spicy, served with white rice and peas who are mixed, and tropical fruit blend.

Serves: 4
Preparation time: 1 uur.

Ingredients:

1 kilogram chicken drumsticks (8 pieces),
2 tablespoons lemon juice or lime juice,
2 teaspoons garlic powder,
1 teaspoon salt,
1 teaspoon galangal,
5 tablespoons peanut oil,
0.4 liters creamy coconut milk,
2 onions,
2 cloves garlic,
2 teaspoons sambal oelek,
2 tablespoons curry Djawa,
150 to 200 grams small mushrooms.

Directions:

Rub the chicken drumsticks in with a mixture of lemon juice or lime juice with garlic powder, salt and galangal.
Let it marinate for 20 minutes, and pat dry with paper towels if necessary.
Fry the chicken drumsticks in 3 tablespoons peanut oil until they are golden brown.

Chop the onions and garlic.
Heat 1 tablespoon of peanut oil in a skillet.
Fry the onions and garlic in the peanut oil for 2 minutes.
Stir the sambal oelek and curry Djawa through, and then add the creamy coconut milk.
Add now the fried drumsticks.
Let everything simmer for about 30 minutes until the chicken is tender and the sauce thickens.

Clean the mushrooms.
Cut larger ones into quarters.

Heat the remaining peanut oil in a wok or wadjan.
Stir fry the mushrooms for 3 to 5 minutes until they are golden brown.

Place the pieces of chicken in the sauce on the plate.
Arrange the mushrooms around it.

Side dish :

Serve with white rice.
Spoon a few tablespoons of cooked peas through the rice.
And an exotic fruit salad fits very well with this dish.
