DutchATJAR KETIMOEN BENING (A traditional sweet and sour of cucumber, leek and red chili pepper)

Atjar Ketimoen Bening. A traditional sweet and sour of cucumber, leek and red chilli pepper. An Indonesian dish prepared by the Happy Chief Cook.

A tasty sweet and sour of cucumber, leek and red chilli pepper.
Despite the red chilli pepper, does this relish extinguishes the very spicy dishes.

Serves: 4.
Preparation time: 15 à 20 minuten.

Ingredients:

1 medium cucumber,
0.5 teaspoon salt
1 red chilli pepper,
1 medium leek (white part only)
1 teaspoon granulated sugar,
2 tablespoons vinegar.

Directions:

Peel the cucumber and cut it into thin slices.

Sprinkle the salt over it and press the cucumbers carefully.
Let it drain.

Wash the red chilli pepper.
Cut the red chilli pepper in half lengthwise and remove the seeds.
Cut the red chilli pepper then into thin strips.

Cut the leek into thin slices and pull the rings apart.

Stir the sugar through the vinegar until the sugar completely has dissolved.

Combine cucumber, red chilli pepper and leeks together, and pour the vinegar-sugar mixture over it.
Then mix everything together well.

Place the sweet and sour in the fridge until it is ready to serve.

Serve it cold.
