DutchNITER KEBBEH (Ethiopian Herb butter)

Ethiopian herb butter (Niter Kibbeh) is indispensable in the preparation of authentic Ethiopian cuisine.
It is used in all courts in which butter is needed.

Preparation time: 25 minutes.

Ingredients:

600 grams butter,
5 to 6 teaspoons ginger powder,
1 clove garlic (finely chopped),
1 large red onion (very finely chopped),
1 tablespoon fenugreek powder,
2 teaspoons cumin powder,
3 teaspoons basil,
1 teaspoon cardamom powder,
1 tablespoon oregano,
0.5 teaspoon turmeric.

Directions:

Mix the onion, garlic and ginger and set the mixture aside.

Melt the butter in a large pan on low heat.
Beware that the color does not change.

Skim any foam off as butter boils.
Keep skimming until no more foam comes.

Add the onion and all spices, and leave it (stirring continuously) simmer for 15 minutes more.

Remove the pan from the heat and leave it for a while so that the herbs have issued all their flavor.

Pour the contents of the pan in a plastic stock box.
Allow it to cool.

Put a lid on and keep the herb butter in a cool place.

Use the herb butter as needed.
