DutchBERBERE (Ethiopian Spice blend)

Berbere is a very spicy spice mixture that forms the basis of the cuisine of Ethiopia. It is composed of many spices, but essential are hot red pepper and fenugreek.

Berbere is a very spicy spice mixture that forms the basis of the cuisine of Ethiopia. It is composed of many spices, but essential are hot red pepper and fenugreek.

Ingredients:

4 teaspoons chili powder extra strong or cayenne pepper (or more to taste),
2 teaspoons Fenugreek seed (available in Asian shops),
2 teaspoons ginger powder,
2 teaspoon cinnamon powder,
2 teaspoons cardamom powder,
2 teaspoons black peppercorns,
1 teaspoon salt,
pinch of nutmeg,
4 teaspoons cumin seeds,
3 teaspoons garlic powder,
4 teaspoons dried basil.

Directions:

Grind the Fenugreek seed and black peppercorns finely.

Mix the chili powder, Fenugreek seed, ginger, cinnamon, kardamompoeder, black pepper and salt together.

Toast the spices (no oil) in a heavy pan on low heat to obtain a more intense flavor in about 10 minutes under stirring constantly.

Grind the cumin seeds finely.

Then add the nutmeg, ground cumin, garlic powder and dried basil to it.

Mix together well.

Enjoy Berbere and try it out in such soup, macaroni, fried rice, for coverage of chicken, beef and lamb, sauces and marinades for seafood and vegetable dishes.

* To grind the herbs I use an electric coffee grinder.
