DutchBEEF WITH MANGOES

Beefsteak with Mangoes, a recipe from China prepared by the Happy Chief Cook.

Deep fried strips of steak with mango, leeks, garlic and ginger in an oyster sauce.

The strips of beef are very tender.
The leeks I used the white part.

Serves: 2.
Preparation time: 45 to 50 minutes.
Technique: deep-frying and stir-fry.

Ingredients:

250 grams of beefsteak,
1 firm mango,
0.3 thin leeks (white part),
2 cloves garlic,
1 inch fresh ginger,
1 tablespoon rice wine,
1 tablespoon soy sauce,
1 tablespoon oyster sauce,
0.3 liters peanut oil,
1.5 teaspoon cornstarch,
1 teaspoon sugar,
salt to taste,
freshly ground black pepper to taste,
3 tablespoons water,
1 mug rice,
1.25 mug water.

Directions:

Pat the beefsteak dry with kitchen paper and cut it into thin slices.

Cook the rice with half a teaspoon of salt and 1.25 mug of water gently until tender with the lid on the pan.
As soon as the rice has absorbed the water, turn off the heat and let it rest for 10 minutes with the lid on it.

Mix 0.5 teaspoon salt, 1 teaspoon sugar, 0.5 tablespoon soy sauce, 1 tablespoon rice wine and 0.25 teaspoon black pepper together.
Mix the sliced beefsteak with this and let it marinate for 10 minutes.

Cut the leek into thin rings.

Cut the butts of the garlic and flatten them with the flat side of the knife.
Remove the hard peel and chop the garlic finely.

Peel the ginger and chop the ginger finely.

Peel the mangoes and cut at every 5 millimeters slices to the kernel.
Keep the mangoes in one hand and cut horizontally slices just above the kernel.
Repeat on the other side of the mangoes.

Make a sauce of the cornstarch, 3 tablespoons water, 1 tablespoon oyster sauce and 0.5 tablespoon soy sauce.

Heat over high heat, 0.3 liters peanut oil in the wok.

Sear the marinated strips of beef steak closed, until they are discolored.
Remove then the fried strips of beef with a slotted spoon from the wok and let them drain.

Pour the peanut oil from the wok into a storage pan.
*** Store the peanut oil for later use. ***

Heat over high heat 3 tablespoons peanut oil again.

Stir-fry the garlic, leeks and ginger until it smells.

Add then the mangoes pieces to, put the lid on the wok and cook for 1 minute.

Stir the sauce well, pour it on the mangoes and bring it to a boil.

Add the fried strips of beefsteak, toss this together and serve the dish on a plate.

Serve with white rice separately.
