DutchBEANS SALAD

A slightly spicy bean salad from Chili, with giant beans, watercress, red onion, fresh roasted red bell peppers, parsley and a dressing.

A slightly spicy bean salad from Chili, with giant beans, watercress, red onion, fresh roasted red bell peppers, parsley and a dressing. Prepared by the Happy Chief Cook.

Preparation time: 25 minutes.
Servings: 4.

Ingredients:

800 grams giant beans (haricots géants) canned,
1 small red onion,
1 small red bell pepper,
1 red chili,
150 grams watercress,
15 grams fresh parsley,
2 tablespoons extra virgin olive oil,
half a lemon,
2 tablespoons red wine vinegar,
half teaspoon sugar,
salt,
fresh ground 4-season pepper.

Predirections:

Preheat the grill to 180 degrees Celsius.
Let the giant beans (haricots géants) drain and rinse under running water.

Peel the red onion and cut it into thin slices.

Cut the red bell pepper into quarters and remove the seeds.
Arrange the red bell pepper pieces on a baking sheet with the skinside up.
Bake 6 to 8 minutes under a preheated grill, or until the skin is black.

Let the red bell peppers cool and remove the skin.
Cut the roasted red bell pepper into cubes.

Cut the red chili in half lengthwise, and remove the seeds.
Cut the red chili into cubes.

Rinse the watercress off.

Rinse the parsley off.

Squeeze the half lemon.
You need 1 tablespoon lemon juice.

Directions:

Put the giant beans (haricots géants) in a bowl.

Add the red onion, red bell pepper, red chili, watercress and flat parsley.

Mix the extra virgin olive oil with lemon juice, red wine vinegar, sugar, salt and 4-season pepper in a small bowl.

Pour the dressing over the vegetables and mix well.
