DutchROASTED LAMB CHOPS

Delicious Argentine roasted lamb chops cooked with red bell peppers, shallots, mushrooms, chili, garlic and fresh rosemary.
Baked in the oven.

Delicious Argentine roasted lamb chops cooked with red bell peppers, shallots, mushrooms, chili, garlic and fresh rosemary. Baked in the oven. Prepared by the Happy Chief Cook.

Servings: 4.
Preparation time: 15 minutes preparation, cooking 50 to 60 minutes.

Ingredients:

12 lamb chops without fat,
salt,
freshly ground 4-season pepper,
3 tablespoons olive oil,
2 red or green bell peppers,
6 shallots,
2 cloves garlic,
1 large red chilli,
1 teaspoon dried oregano,
200 grams mushrooms,
3 vine tomatoes,
3 tablespoons white wine
0.25 liter chicken stock,
1 can tomato paste 68 grams,
2 tablespoons fresh rosemary leaves.

Predirections:

Cut the shallots into small cubes.

Cut the butt of the garlic clove and then give a blow with the flat side of the knife on the clove of garlic.
Remove the hard skin of the garlic.
Chop the garlic cobweb.

Cut the red pepper in half lengthwise.
Remove the seeds.
Cut the red pepper finely.

Cut the mushrooms in sliches.

Wash the tomatoes and cut into 8 wedges.

Remove the leaves from the rosemary sprigs.
Chop the rosemary leaves finely.

Directions:

Preheat the oven to 180 degrees Celsius.

Bring the lamb chops to taste with salt 4-season pepper.
Heat 2 tablespoons olive oil in a large heavy bottom casserole on a medium to high heat.
Add the meat in portions, and let it get fast tanning.
Place the lamb chops aside.

Add the bell peppers to the pan and cover with a lid.
Let it bake 10 minutes while you frequently turn the bell peppers around.
Remove them from the pan.
Cut them in halve and remove the seeds.
Place the halved peppers aside.

Heat the remaining olive oil in a casserole on medium heat.
Add the shallots, garlic and red chili pepper and let it bake 2 minutes.

Add the dried oregano, sliced mushrooms and tomato slices bunch, and let it bake 2 minutes.

Add the white wine, chicken stock, tomato paste and rosemary.
Bring it to the boil and let it simmer for 3 minutes.

Spread the lamb chops over it, and lay the peppers on top.
Cover the casserole with foil and place it in the oven.

Let the court 20 to 30 minutes baking in the oven, or until the meat is tender.

Serve with vegetables or a salad and boiled young potatoes or white rice.
